Pelleted horse manure and chicken manure are slow-release fertilizers that provide relatively balanced nutrient levels of N (nitrogen), P (phosphorus), K (potassium) over a relatively long period of time.

Incidentally, chicken manure and horse manure is only fresh too hot. This comes because of the high urine content in fresh crap. If the manure is dried, sterilized and pelleted, only very little remains of the urine.

Once incorporated in the soil, the microorganisms begin to decompose or mineralize the ground (: a worm eats soil and shits minerals :). The plant can then use it when needed.
